Tuna Pepper Jack Melt

Open-faced albacore tuna salad on sourdough with a slice of tomato and pepper jack cheese melted on top. 


4 slices sourdough bread

4 slices pepper jack cheese

1 Tbsp butter

6 oz albacore tuna, drained

2 Tbsp mayonnaise

1 Tbsp dill pickle relish

½ cup black olives, halved

2 Tbsp onion, finely diced

Garlic salt and pepper, to taste

4 tomato slices, optional

Butter one side of the bread slices and griddle (or in a skillet) butter side down. Mix tuna with mayonnaise, dill relish, olives, onion, and seasoning. When bread is golden brown, remove from the griddle to a plate. Spoon tuna mix generously over the toast and top with a slice of tomato then pepper jack. Melt in the microwave for 30 seconds or broil until the cheese is melted.
