1 lb ground turkey (or chicken)
1 cup tri-colored coleslaw, chopped a little smaller
6 mushrooms, chopped fine
3 green onions, chopped + more for garnish
3 cloves garlic, minced
1 Tablespoon ginger, minced
2 Tablespoons sesame oil
2 Tablespoons mirin or dry sherry, optional
1 Tablespoon soy sauce
1 teaspoon fish sauce
¼ tsp salt
Freshly ground pepper, to taste
1 package wonton wrappers
Ginger miso broth (I find it at Trader Joe’s) or water
Chili crisp or sweet chili sauce, for serving
In a large mixing bowl, mix ground turkey with coleslaw, mushrooms, green onions, garlic, ginger, sesame oil, mirin or cooking wine, if using, soy sauce, fish sauce, salt, and pepper. Layer a tablespoon of meat into 6 ½ cup ramekins, then a wonton wrap. Continue to layer until just about to the top of the ramekins. Top off the ramekins with about 3 tablespoons of water (or ginger miso broth).
Place a washcloth in the bottom of a large skillet, then place ramekins on top (this keeps them from rattling). Add water to the skillet until it comes halfway up to the ramekins. Turn the heat to medium and cover with a lid. When it boils, turn the heat to medium-low and simmer for 20 minutes. Serve with a garnish of green onions and a drizzle of sweet chili sauce, or chili crisp.
