Mexican Corn Dip

Delicious corn dip with flavors of lime, cilantro, jalapeno, and cotija cheese. Enjoy with tortilla chips or just with a spoon…so amazing! 4 Tbsp butter

1 cup onion, diced

1 tsp chili lime seasoning, I found at Trader Joes (or Tajin seasoning)

8 cups corn, frozen or fresh

Pepper, to taste

2 limes, zested and juiced

⅓ cup mayonnaise

4 Tbsp cilantro, minced

¼ jalapeno piece, minced (or more as desired)

¼ cup cotija cheese, crumbled

Saute onion in butter over medium heat until translucent, about 5 minutes. Turn off heat and add in chili lime seasoning, corn, pepper, lime zest and juice, mayonnaise, cilantro, jalapeno and cotija cheese. Serve with tortilla chips.
