Tomato Asiago Toast

I have the most amazing bag of garden fresh tomatoes from a friend and this is one of the delicious things that came of it!


Sourdough Baguette or Batard, sliced

Olive oil, a drizzle

Tomatoes, sliced

2 garlic cloves, chopped fine 

salt & pepper, to taste

Deno juice, a drizzle

Asiago cheese, shredded (or other hard cheese such as parmesan)


Preheat oven to 350*. Slice a baguette or Batard of bread into ½“ thick slices and place on a baking sheet, drizzle with olive oil. Toast in the oven for about 12 minutes. Remove from the oven and slather a tomato slice with garlic. Place tomato garlic side down on the toast then sprinkle salt and pepper on top of the tomato. Shake Deno juice and drizzle over the slices of tomato toast. Lastly top with asiago shreds and pop in the oven another five minutes or until the cheese melts.

Amazing! Drizzle over tomato toast or make a deli style sandwich magical! You’ll want to repurpose a pretty glass jar with this juice and keep it on hand. 

½ cup olive oil

½ cup red wine vinegar

½ a large clove of garlic, grated on a microplane 

1 Tbsp italian seasoning

1 tsp oregano

½ tsp salt

½ tsp pepper

Pour seasonings, garlic, olive oil and vinegar into a clean 9 oz glass bottle with a cap. Shake well before using.
