Apple Cider Sourdough Bread

3 cups flour

1 tsp salt

¾ cup sourdough starter

1 cup apple cider

1 apple, cored and diced

1 Tbsp sugar

1 tsp cinnamon

¼ tsp nutmeg

¼ tsp allspice

¼ tsp cloves

In a mixing bowl, whisk flour and salt together. Add in sourdough starter and apple cider mixing until the dough forms a shaggy mass. Allow to rest for 30-60 minutes. Perform 3 series of stretch and folds about 30 minutes apart. Cube the apple and stir in the sugar and spice. After the third series, pull dough onto a lightly floured flat surface into a rectangle. Spread ¾ of the apple mixture over the dough. Fold one-third of the dough over, then the other third of the dough over. Spread the remaining apple mixture over the remaining dough and roll up.  Place the dough into a lightly floured banneton or a towel-lined bowl with the seam edge up. Zip the seam up with our fingers as necessary to tighten the closure. Cover and allow to rise overnight. In the morning, preheat oven to 450*. Turn the bread over onto a piece of parchment so that the smooth side is up. Using a lame or razor, score as desired (I like to score an apple on top). Place parchment in a Dutch oven. Bake for 25 minutes with a lid on. Remove the lid and bake for another 20 minutes.
