Banana Brownies with Peanut Butter Banana Frosting
Moist and fudgy, these decadent banana brownies are perfect with the pairing of peanut butter icing and the sweetness of bananas frosted right in. Taking inspiration from Taste and Tell.
½ cup of butter
1 ½ cups semi-sweet chocolate chips
4 eggs
1 ½ cups brown sugar
3 bananas
1 tsp vanilla
½ tsp salt
1 ½ cups flour
Preheat oven to 350*. Spray oil in a 9x13-inch baking dish and set to one side. Microwave butter and chocolate chips in a glass measuring bowl for 1 minute. Stir till smooth (add 30 seconds if it isn't fully melted) and pour into a mixing bowl. Add eggs, brown sugar, bananas, vanilla and salt. Mix for about 2 minutes, add flour, and mix until just incorporated. Spread in a baking dish and bake for 30 minutes. Cool completely before frosting.
Peanut Butter Banana Frosting:
½ cup butter, room temperature
½ cup peanut butter
1 banana
1 tsp vanilla
⅛ tsp salt
2 cups powdered sugar
Whip butter and peanut butter in a stand mixer until well mixed, add banana, vanilla, salt & powdered sugar. Mix until smooth then ice the cooled brownies.
