Tender buttery brioche buns made homemade will definitely make your burgers or sammies off the charts amazing. Inspired by the fabulous Amy of House of Nash Eats https://houseofnasheats.com/homemade-brioche-hamburger-buns/

1 cup water, warm

¼ cup milk

1 Tbsp yeast

2 Tbsp sugar

2 eggs, divided

3 ¼ cups bread flour

1 ½ tsp salt

4 Tbsp butter, softened

Sesame seeds or everything but the bagel seasoning

In a stand mixer layer the water, milk, yeast and sugar, stir to mix the yeast in a bit and let stand while it gets foamy for 1 minute. Top with 1 egg and one egg yolk, flour, salt and butter. Mix for 2-4 minutes with the paddle attachment. Cover with plastic wrap and let rise for about an hour.

Turn out onto a floured rolling surface and generously flour the top of the dough as well; as this is a soft, wet dough. Roll the dough into a log shape and cut into 10 equal pieces. Roll each piece into a round shape in the palm of your hand. Place on an oiled baking tray or line with a silpat and spray oil. Mix the remaining egg white with 1 tsp water and brush over the buns. Sprinkle them with sesame or everything but the bagel seasoning. Allow to rise for 30-60 minutes. Preheat oven to 400* and bake for 15 minutes. The tops will be golden and beautiful.
