Cheddar Cheese Buns

1 cup warm water
1 Tbsp yeast
¼ cup sugar
3 ½ cups flour
2 Tbsp onion powder
2 Tbsp garlic powder
1 Tbsp chives, dried
1 ¼ tsp salt
2 Tbsp butter, softened
1 egg
1 cup cheddar cheese, shredded
In a stand mixer, layer ingredients in the order listed to the bowl. Mix for approximately 2 minutes with the dough hook. Dough will have pulled from the sides of the bowl but still be soft. Cover bowl with plastic wrap and allow to rise in a warm draft free place for about an hour or until the dough ball has doubled in size. Roll dough out of the bowl onto a rolling surface dusted with flour. Divide the dough into 10 equal portions. Roll each portion in your hand tucking edges under until you have a lovely circle. For very large burger buns, roll dough into a rectangle and cut out with a sturdy margarita glass. Place rolls on 2 oiled baking sheets (or line with a silpat or parchment paper). Allow to rise for 30-60 minutes in a warm and draft free place.
2 Tbsp butter, softened (for topping)
½ cup cheddar cheese, shredded (for topping)
Spread very soft butter over the top of the rolls and sprinkle with one tablespoon of the shredded cheese. Preheat oven to 350. Bake for 16-20 minutes. Breads are done when an insta-thermometer reads a minimum of 190*. Let cool before slicing in half.
