Almond Craisin Granola

6 cups oats

¾ cup wheat germ or almond flour

½ cup ground flax

¼ cup sesame seeds

1 ½ cups shredded coconut

1 ½ cups craisins

1 cup almonds, rough chopped

1 Tbsp cinnamon

½ tsp salt

½ cup maple syrup

3 Tbsp olive oil

2 Tbsp brown sugar


Preheat oven to 200*. Layer on a rimmed cookie sheet the oats, wheat germ or almond flour, flax, sesame seeds, coconut, craisins, almonds, cinnamon and salt. Measure the maple syrup, olive oil and brown sugar in a glass measurer and microwave for 30 seconds. Pour over the granola mixture and stir in with a spatula. Bake for 40 minutes and allow to cool. If you don't stir you’ll have some lovely clumps of granola. Store in an airtight container for a couple of weeks. Makes enough to share and looks lovely as a gift in a jelly jar.
