Baked Blueberry Lemon French Toast

8 croissants, sliced into 5 pieces
1 cup blueberries
1 ½ cups half n half
3 eggs
¼ cup sugar
1 lemon, zested
2 teaspoons vanilla
1 teaspoon cinnamon
2 Tablespoons powdered sugar
Crumble:
¼ cup flour
¼ cup brown sugar
¼ cup butter, melted
½ teaspoon cinnamon
½ teaspoon vanilla
Butter or spray oil a 9.13 baking dish. Place sliced croissants in the prepared dish and sprinkle with blueberries. Whisk eggs in a mixing bowl with half n half, sugar, lemon zest, vanilla, and cinnamon. Pour the egg mixture over the croissants, cover with plastic wrap and refrigerate overnight.
Mix the crumble ingredients together in a mixing bowl and sprinkle evenly over the top of the French toast. Turn the oven to 350* and place the casserole on the middle shelf of the cool oven. Bake for 45 minutes. Slice into squares and serve with powdered sugar and maple syrup.
