Banana Peanut Butter Mug Muffin

1 overripe banana
1 Tablespoon peanut butter
1 Tablespoon maple syrup
1 Tablespoon butter, melted
1 teaspoon vanilla
4 Tablespoons flour
2 Tablespoons almond flour
½ teaspoon cinnamon
¼ teaspoon baking powder
Salt, a pinch
2 Tablespoons chocolate chips + more for garnish
Turbinado or raw sugar
Peanut butter, for garnish
Banana slices, for garnish
In a small bowl, mix banana with peanut butter, maple, butter, and vanilla. Add flour, almond flour, cinnamon, baking powder, salt, and 2 tablespoons of chocolate chips. Stir into the mix until just combined. Divide the batter between two buttered ½ cup ramekins or microwave-safe mugs. Sprinkle the tops with turbinado sugar and microwave for 1 ½ minutes. Let sit for about 2 minutes before serving. Garnish with a puddle of peanut butter, banana slices, and chocolate chips.
