Banana Bread Chocolate Chip Sour Cream Snack Cake

¾ cup butter, softened
3 cups sugar
3 3ggs
6 very ripe bananas
2 tsp vanilla
4 ½ cups flour
2 tsp cinnamon
½ tsp salt
3 tsp baking soda
2 cups sour cream
1 ½ cups dark chocolate chips + more for topping
Spray oil
Cinnamon Sugar (1/4 cup sugar mixed with 1 tsp cinnamon)
Preheat oven to 350* and spray oil 3 baking pans (I like to use a 9.13 baking dish, 8” square and a loaf pan). Sprinkle the pans with a light layer of cinnamon sugar. In a stand mixer cream the butter and sugar on medium-high speed for a few minutes until fluffy. Add eggs, bananas and vanilla to the mixer and mix until incorporated. In a small mixing bowl, whisk the flour, cinnamon, salt and baking soda together. Spoon into the mixer and top with the sour cream and chocolate chips. Turn on the mixer for just a few turns. Remove the bowl and finish incorporating the last few ingredients with a large rubber scraper. Pour into the prepared dishes, sprinkle a few more chocolate chips on top and bake until a toothpick test comes out clean.
Bake Bread for 50-60 minutes (makes 3 pans)
9.13 Snack cake for 30-35 minutes
8” snack cake for 25-30 minutes
