Jamaican Banana Bread

3 bananas
1 cup sugar
2 eggs
½ cup butter, melted
½ cup sour cream
3 Tbsp rum
1 tsp vanilla
2 cups flour
¾ tsp baking soda
½ tsp salt
½ cup coconut + 1 Tbsp, divided
½ cup powdered sugar
2 Tbsp lime juice
Preheat oven to 350*. Spray oil in a bread pan and set aside. Beat bananas, sugar and eggs in a stand mixer. Add in the melted butter, sour cream, rum and vanilla. In a small bowl stir together the flour, baking soda and salt. Pour over the batter ingredients and top with ½ cup coconut. Stir until just incorporated to keep the bread tender. Pour into your prepared bread pan. Top with the Tbsp of coconut and bake for about 65-75 minutes. Test with a toothpick to be sure it's done. Toothpick should come out clean.
Mix together the powdered sugar and lime juice. Spoon the glaze over the warm loaf.
