Banana Chocolate Chip Chai Muffins with Salted Honey Butter

3-4 bananas
⅓ cup coconut oil, melted
⅓ cup honey
2 eggs
1 Tbsp vanilla
1 ½ cups flour
1 ½ tsp baking soda
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp cardamom
½ tsp ground allspice
½ tsp ground cloves
½ tsp salt
1 cup dark chocolate chips
Salted Honey Butter:
¼ cup butter, melted
2 Tbsp honey
¼ tsp flaky salt
Preheat oven to 350*. Line a muffin tin with paper liners and set aside. In a mixing bowl, whisk banana, coconut oil, honey, and eggs. In a large Pyrex measurer or other large mixing bowl, whisk the dry ingredients and pour them over the banana mixture. Add chocolate chips and stir, folding until the batter is just incorporated. Scoop the dough into the prepared muffin pan and bake for 18-22 minutes, or until a toothpick tester comes out batter-free. My favorite test for doneness is using an instant thermometer; the muffins will register a minimum of 200* when tested with a insta-thermometer.
In a small bowl, combine butter, honey, and flaky salt. Serve with warm muffins.
