Banana, Espresso & Chocolate Chip Muffins
These amazing banana chocolate chip muffins have a bit of espresso powder in them. They are tender and very flavorful. I’ve barely adapted these great muffins from Handle the Heat...thanks Tessa. 4 bananas
½ cup sugar
¼ cup brown sugar
½ cup butter, softened
1 ½ cups flour
1 ½ tsp instant espresso powder
1 ½ tsp baking soda
1 tsp salt
¼ cup milk
1 egg
1 tsp vanilla
1 cup chocolate chips
Preheat oven to 350 * and spray a muffin tin or with liners if you like with a bit of spray oil. Cream the banana, sugar, brown sugar and butter together in a stand mixer. Whisk the flour, coffee, soda and salt together in a small bowl. Spoon into mixer then add the milk, egg, vanilla and chocolate chips. Mix until just incorporated. Bake for 15-20 minutes.
