Unicorn Pancakes

These fun pancakes are amazing and kids of all ages love them.  They have raspberries and m&m’s in them and the color is beautiful to watch as they cook. 2 cups flour

4 tsp. baking powder

1\2 tsp. salt

2 eggs

1 1\2 cups milk

1\2 cup butter,melted

1 tsp. vanilla

1 cup mini m&m’s

12 oz frozen raspberries

Mix flour, baking powder and salt in a mixing bowl with a whisk.  With a rubber scraper add the eggs, milk, vanilla, m&m’s and raspberries.  Preheat griddle or cook in a large skillet over medium heat.  Spoon 1\2 cup batter onto hot and oiled griddle\skillet.  Cook till pancakes begin to develop bubbles and the bottom side is golden.  Cook a couple more minutes.  You can test for doneness by poking a spatula into the middle.  If there is no doughiness then they are done.

Serve with your favorite accompaniments...we use just a slather of butter.
