Birthday Breakfast

Birthday breakfast started right, with a amaretto mimosa and an egg over shiitake fried rice. Make someone’s day special with a special brunch.

Cherry Ama-mosa

1 shot amaretto

1 shot cherry juice

3 cherries, pitted

Sparkling lime water or prosecco


Add amaretto, cherry juice and cherries to a champagne flute and top off with the sparkling lime water or prosecco. Better yet make 2 and join the celebration.

Shiitake Spinach Saute with an Egg

3 tsp butter, divided

6 shiitake mushrooms, sliced

1 green onion, diced

¾ cup rice, cooked

1 cup spinach

2 eggs

Salt & pepper, to taste

1 tsp water

Saute mushrooms in a nonstick skillet with 2 tsp of the butter for about 2 minutes. Add the rice, spinach and green onion and stir a bit to warm. Push all ingredients to the edges or one side of the skillet. Add the final tsp butter and crack eggs on top. Season, add the tsp of water and quickly cover with a lid. Allow the eggs to steam-set for one minute or until desired level of doneness. I like the white cooked till white (not translucent) and the yolk still wobbly. Transfer fried rice to bowls or ramekins for serving and top with an egg.
