Banana Pineapple Coconut Bread

This is a moist and tender bread with bananas, pineapple, coconut & pecans. This is quite reminiscent of a hummingbird cake. Lovely toasted with butter and honey or just warm out of the oven. 1 1/4 cups flour 

1 tsp baking powder 

¼ tsp salt 

3 bananas, over ripe

½ cup butter, melted

⅔ cup sugar

1 egg

1 tsp vanilla

¾ cup coconut, shredded

½ cup pecans, chopped

1 cup crushed pineapple

 

Preheat oven to 375*, butter a bread pan and sprinkle with a dash of cinnamon sugar mixture. In a mixing bowl whisk the flour, baking powder and salt together. Blend in bananas, butter, sugar, egg, vanilla, coconut, pecans and pineapple. Mix until just incorporated. Pour into the bread pan and bake for about an hour or until a toothpick/tester comes out clean.
