Boiled Breakfast Potatoes with Butter

Boiled potatoes cooked and sauteed with butter and garlic. I made mashed potatoes last night and boiled up a couple of extra potatoes for breakfast. No browning needed, no fuss, just buttery delicious potatoes. 


2-4 russet potatoes, peeled and boiled in chunks

2 Tbsp butter

Salt and pepper, to taste

4 cloves garlic, minced

2 Tbsp green onions/parsley, optional garnish

Boil potatoes (or grab the leftover bag from the fridge) and transfer cooked potatoes with a slotted spoon into a preheated skillet with melted butter. Cook stirring with salt, pepper, and garlic. When heated through, place on a platter with a ramekin of additional melted butter and garnish if you like with green onions and parsley. Obviously, someone will want ketchup too ;]
