Breakfast Hamburger Tacos

Hamburger, melty pepper jack cheese and scrambled eggs make amazing breakfast tacos. Enjoy with your favorite mexi ingredients. 

4 corn tortillas

1 Tbsp olive oil

1 lb hamburger

4 eggs

Salt and pepper, to taste

¼ cup enchilada sauce

4 slices pepper jack cheese, or cheddar

2 green onions, sliced

1 avocado, diced

½ cup pico de gallo, or salsa

½ cup sliced black olives

¼ cup sour cream

Warm the tortillas in a large skillet with the olive oil turning to cook each side for about 1 minute. Place on a plate and keep warm. Add hamburger to the skillet and cook until done, seasoning with salt and pepper. Remove the hamburger from the skillet and scramble the eggs with salt and pepper. Place a generous tablespoon of enchilada sauce on each tortilla, top with cheese and melt in the microwave for 30 seconds or on a warm griddle. Top with hamburger, scrambled egg, green onions, avocado, pico de gallo or salsa, black olives and sour cream. Serve warm with additional hot sauce.
