Turkey Scrambled Egg Pocket Sandwiches

8 slices deli turkey meat , or other favorite

8 slices sharp cheddar, pepper jack or favorite sliced cheese

4 eggs, scrambled 

3 green onions

2 avocados, diced

Egg wash:

1 egg

1 Tbsp water

2 tubes crescent dough or 

1 batch homemade https://denosdiner.com/baked-goods/crescent-dough 


Preheat oven to 375*. Line a rimmed baking sheet with parchment paper or a silpat. Roll dough into 8 large squares (instead of triangles). Top square with turkey, cheese, scrambled egg, green onions and avocado. Fold edges over and press closed to form a pocket. Place seam side down on the prepared baking sheet. Whisk the egg wash and brush top and edges of sandwich. Bake for 13-18 minutes or until golden brown.
