Mini Maple Banana Pancake Muffins

Banana, maple and pumpkin spice fragrance these lovely little pancake muffins. Easy and quick to bake in a mini muffin tin and perfect for on the go. Inspired by blogger Bakerella published at Williams Sonoma https://www.williams-sonoma.com/recipe/mini-banana-maple-pancake-muffins.html 


1 banana, mashed

2 Tbsp maple syrup

1 egg

⅔ cup buttermilk 

1 tsp vanilla

2 Tbsp butter, melted

1 cup flour

2 Tbsp sugar

1 tsp baking powder

½ tsp baking soda

½ tsp pumpkin spice seasoning

¼ tsp salt


Maple Butter Syrup:

2 Tbsp butter

1 cup maple syrup

Toasted walnuts, optional


Preheat oven to 350*. Spray oil or butter a mini muffin tin. Mash banana in a large mixing bowl, add maple syrup, egg, buttermilk and vanilla. Stir in melted butter. In a small mixing bowl, whisk flour, sugar, baking powder, baking soda, pumpkin spice and salt. Pour over batter and stir gently until just incorporated. Drop batter with a small cookie scoop into prepared muffin tin wells. Bake for 10-12 minutes. Warm the butter and maple syrup together while pancake muffins bake. Serve with maple butter syrup and toasted walnuts, if desired.
