Breakfast Rancheros Tortilla

If you love huevos rancheros; you'll love this over-the-top free-form version. Use some or all of the toppings listed or use some things you have on hand that fit the theme. 1 burrito-sized tortilla

Spray olive oil

¼ cup refried black beans

2 Tbsp enchilada sauce 

4 slices pepper jack cheese

3 eggs

1 tomato, diced (or cherry tomatoes, halved)

2 green onions, sliced

¼ cup black olives, halved or sliced

2 Tbsp cotija polvo cheese

3 Tbsp sour cream

¼ cup cilantro, chopped

Cholula hot sauce

Preheat oven to 375*. Spray oil a 10” skillet and press the tortilla in it. Spread a layer of black beans on top and smooth with a layer of enchilada sauce. Top with pepper jack cheese and crack 3 fresh eggs on top. Sprinkle with tomato, green onion, black olives, and cotija cheese. Bake for about 10 minutes. Top with sour cream, cilantro, and hot sauce.
