If you love huevos rancheros; you'll love this over-the-top free-form version. Use some or all of the toppings listed or use some things you have on hand that fit the theme. If you love your eggs sunny-side up, cook them in a skillet and place on top after the tortilla is finished baking. Inspired by sara.haven of instagram https://www.instagram.com/p/CqBGZI7JYjy/
