Strawberry Muscat Crepes

Fresh sliced strawberries marinated in Petersons Muscat Blanc dessert wine and cooked into French crepes for breakfast. Muscat has always been a favorite of mine. The crepes can be made a day in advance and this would come together quickly in the morning. Crepe recipe included below for convenience.
4 cups strawberries, sliced
1 cup Peterson Muscat dessert wine
1 Tbsp cornstarch
2-4 Tbsp sugar, depending on your taste and the sweetness of the strawberries
Whipped cream, melted chocolate (or white chocolate), powdered sugar, and sliced strawberries for garnish choices.
Slice strawberries into a large flat-bottomed glass container with a tight lid. Pour muscat over the berries and place the lid on and turn over a few times. Refrigerate overnight.
When ready to cook, add the cornstarch and sugar into a medium-large skillet along with the berries and muscat. Cook over medium heat for a couple of minutes, until thickened. Taste and add more sugar if needed.
Spoon strawberries with sauce down the middle of the crepes and roll them up. Place a few fresh sliced strawberries on top and drizzle with melted chocolate, or white chocolate, whipped cream, or a dusting of powdered sugar.

4 eggs
2 cups milk
1 Tbsp sugar
1 tsp vanilla
¼ tsp salt
1 ½ cups flour
3 Tbsp butter + more for the skillet
Layer eggs, milk, sugar, vanilla, salt, flour, and 3 tablespoons of melted butter in a blender. Whiz until smooth.
Over medium-low heat, brush butter in a 9 or 10-inch nonstick skillet to melt. Pour just enough batter into the preheated skillet to swirl and coat the pan. Cook for about 1 minute on one side, using a rubber spatula, loosen the crepe around the edges, and cook about 30 seconds on the flip side. Repeat with the rest of the batter.
