Perfect Crepes

Golden delicious French crepes are the perfect vehicle for flavors. These crepes cook evenly and release from the pan easily. Crepes are whizzed up in the blender and so are quick to whip up. Serve with fresh berries and lightly sweetened whipped cream or cooked fruit sauce, lemon curd or jam of any kind, or powdered sugar and drops of lemon juice. 4 eggs

2 cups milk

1 Tbsp sugar

1 tsp vanilla

¼ tsp salt

1 ½ cups flour

3 Tbsp butter + more for the skillet

Fresh berries, jam, lemon curd, whipped cream, or powdered sugar and lemon for a flavorful garnish


Layer eggs, milk, sugar, vanilla, salt, flour, and 3 tablespoons of melted butter in a blender. Whiz until smooth. 

Over medium-low heat, brush butter in a 9 or 10-inch nonstick skillet to melt. Pour just enough batter into the preheated skillet to swirl and coat the pan. Cook for about 1 minute on one side, using a rubber spatula, loosen the crepe around the edges, and cook for about 30 seconds on the flip side. Repeat with the rest of the batter.

Spread fruit and cream down the middle and roll up, or brush crepes with lemon curd or jam and fold into triangles. Sprinkle with drops of lemon juice and powdered sugar.
