Cardamom Plum Cobbler Muffins

Cardamom and chopped plums stud these cobbler-style muffins; spoon melted cardamom butter and raw sugar on top to make them sparkle. Inspired by Helene Siegel and Karen Gillingham in their The Totally Muffins Cookbook.

1 ½ cups flour

½ cup sugar

2 ½ tsp baking powder

2 tsp cardamom

¼ tsp salt

6 Tbsp butter, softened

1 cup milk

2 cups plums, chopped


Cardamom Topping:

3 Tbsp butter, melted

1 tsp cardamom

4 Tbsp raw sugar

1 sliced plum, optional

Preheat the oven to 400*. Line a muffin tin with about 10 liners. In a mixing bowl, whisk the flour, sugar, baking powder, cardamom, and salt. Using a pastry blender, large fork, or your hands, rub the butter into the dry ingredients. Stir in the milk and plums. Drizzle with a bit of butter, sprinkle with a bit of raw sugar, and a light dusting of cardamom. A slice or chunk of additional plum on top is optional, but pretty and delicious. Bake 20-25 minutes or until a toothpick tester comes out batter free. I like to use a insta-thermometer; should read a minimum of 200*.
