Egg Chili Cheese Toast

Chili cheese toast with scrambled eggs, garlic butter, and pepper jack cheese. This flavorful toast is a great way to start your morning. Broil at the last minute before serving, until the cheese is beautifully browned (my broiler is out so I used the microwave to melt the cheese).


4 eggs

Salt and pepper, to taste

2 Tbsp diced green chilis

3 Tbsp butter, softened

2 cloves garlic, minced

4 slices sourdough bread

4 slices pepper jack cheese

Whisk eggs, salt, pepper, and green chili together in a mixing bowl with a fork. Mix butter and garlic together in a small bowl, add 1 tablespoon of the garlic butter to a frying pan, and preheat over medium heat. When the butter is foamy, add the eggs and scramble until soft set. Remove eggs from the heat. Toast the bread and spread it with the remaining garlic butter. Place the bread on a baking sheet and top each slice with a spoonful of the scrambled eggs and a slice of pepper jack cheese. Broil until beautifully golden (or microwave for about 30 seconds or until the cheese is melted).
