Cheesy Mashed Potato Cakes with Fried Eggs

Got mashed potatoes; delicious leftover mashed potatoes bring amazing life to breakfast, mixed with cheese, green onions, and topped with an egg. It’s gonna be a great day!!!


2 cups leftover mashed potatoes

2 cloves garlic, minced

Salt and pepper, to taste

2 green onions, minced

½ cup parmesan or cheddar cheese, grated

2 Tbsp butter

4 eggs


Mix mashed potatoes with garlic, salt,  pepper, green onions, and your favorite grated cheese. Form the potatoes into patties. Melt half the butter in a skillet over medium heat. Fry the potato patties until a golden brown skin forms, melt the rest of the butter, and turn the cakes over. Cook until heated through. Fry the eggs either sunny-side up or easy-over, as you like them. Top with a fried egg and garnish with a few green onions.
