Chocolate Banana Muffins

Incredibly moist and chocolaty banana muffins with chocolate chips and the warmth of cinnamon. Inspired by Dot Vartan in her Mad About Muffins cookbook.

4 bananas

½ cup sugar

1 egg

1 tsp vanilla

¼ cup butter, melted

⅔ cup milk

1 ¼ cups flour

⅓ cup baking cocoa

1 Tbsp baking powder

½ Tbsp cinnamon

¼ tsp salt

½ cup dark chocolate chips

Preheat oven to 375*. Line a muffin tin with muffin liners, spray them with oil and sprinkle them with a bit of cinnamon sugar. In a mixer, beat bananas until mashed. Add in the sugar, egg, vanilla, butter and milk. Mix until well incorporated. Whisk flour, baking cocoa, baking powder, cinnamon and salt together in a large mixing bowl. Add the flour mixture into the batter and mix on low speed until just incorporated. Scoop into the prepared muffin liners and bake for 22-25 minutes or until a toothpick inserted in the middle of the muffin comes out clean or with a couple of loose crumbs adhering to it.
