Baked Egg Cups on Toast with Bacon

Eggs on toast rounds, baked in muffin tins and wrapped with bacon or topped with cheese. Yes, you can have both!! Breakfast is delicious and amazingly quick with a muffin tin…do you know the muffin man, he likes eggs too.

6 bread rounds

1 Tbsp butter, softened

6 eggs

6 bacon strips, optional

Salt and pepper, to taste

Parmesan cheese, grated 

Preheat oven to 450*. Par-cook the bacon strips on a plate between paper towels in the microwave for about 1 minute per slice. Let them cool until they can be handled. Cut bread into rounds slightly larger than the muffin tin and place on the bottom of each muffin well, spread with a bit of butter, if you like. Surround with bacon (if using). Crack an egg on top and add salt and pepper to your liking. Bake for about 12-13 minutes or 15-16 minutes with bacon. My yolks were almost set with a little bit of run. Cook a minute longer if you like them fully cooked. Serve warm with freshly shredded parmesan cheese.
