Egg Broccoli Cheddar Scramble Muffins

Scrambled eggs with broccoli and topped with cheddar; and just 10 minutes away. I love eggs and these use last night’s broccoli that is already cooked and waiting for some love.

2 Tbsp butter, softened

6 eggs

1 cup cooked broccoli, chopped

1 green onion, sliced

Salt and pepper, to taste

½ cup cheddar cheese, shredded

Preheat oven to 450*. Butter 6 muffin wells with the butter. Mix eggs, broccoli, green onion, salt and pepper in a bowl. Divide the mixture between the muffin wells. Top with shredded cheddar cheese and bake for 10-12 minutes.
