Chocolate Chip Devils Food Muffins

Decadent chocolate muffins with chocolate chips are amazingly moist and delicious. These little gems come from Marie Simmons in her Muffins A-Z cookbook.

2 cups flour 

⅔ cup unsweetened cocoa powder 

½ cup sugar 

2 tsp baking soda

½ tsp salt 

1 ⅓ cups milk 

⅓ cup olive oil or vegetable oil 

2 eggs 

1 tsp vanilla 

1 cup dark chocolate chips 


Preheat oven to 350* and spray oil or add muffin liners to a muffin tin. Whisk flour, cocoa, sugar, baking soda, and salt together in a mixing bowl. In another mixing bowl, whisk milk, oil, eggs, and vanilla until smooth. Fold in flour mixture and chocolate chips until just incorporated. Fill muffin wells about ¾ of the way full and bake for 20-22 minutes or until a toothpick tester comes out clean. I like to use a insta-thermometer; should read a minimum of 200*.
