Spinach Gruyere Crustless Quiche

Spinach and gruyere cheese combine with cottage cheese to mix up this high-protein crustless quiche; delicious and with an airy fluffy texture.

7 eggs

1 cup cottage cheese

5 Tbsp butter, divided

4 oz cream cheese, softened

¼ tsp salt

Pepper, to taste

¼ cup flour

¼ tsp baking powder

½ cup milk

½ cup gruyere cheese, grated

2 cups fresh baby spinach

Preheat oven to 350*. Spread 1 tablespoon of the butter in a 10” deep pie dish. Crack eggs into a blender, add cottage cheese, melt the remaining ¼ cup butter and pour in. Add cream cheese, salt, pepper, flour, baking powder, and milk. Blend until smooth. Place spinach in buttered pie dish if microwave-safe (or another microwave-safe dish) and cook for 1 minute until wilted. Remove from the microwave and add half of the gruyere cheese. Top spinach and cheese with the egg mixture and sprinkle the last of the cheese over the top. Bake for 30-40 minutes or until the egg mixture is set.
