Sourdough Discard Flatbread with an Egg

Soft and fluffy piadine like flatbread also a bit like a pancake. Super simple and delicious with an egg. Inspired by a Facebook post that I can’t find again to give proper credit. They used this method as a makeshift pizza dough. I prefer a chewy pizza dough but love this as a flatbread.
1 Tbsp olive oil
½ cup sourdough starter or discard
Seasoning, I used everything bagel seasoning
1 egg, cooked to your liking
Preheat skillet with olive oil over medium-high heat. Add sourdough starter and spread out a bit with a rubber scraper. Turn over after a couple minutes with a spatula and press down to flatten and make larger. Turn again and press down again. Both sides will be golden brown when done. Poke the middle open to be sure it’s not doughy inside.
Top with seasoning and the egg.
