Cottage Cheese Spinach Quiche Bake

Filled with cottage cheese, spinach, cherry tomatoes, and baked with a cheddar cheese lid, this tortilla quiche is a lean and high-protein breakfast to help you power through your busy day.

1 Tbsp butter 

5 oz spinach

2 cloves garlic, minced 

1 cup cottage cheese 

4 eggs 

Salt and pepper, to taste 

½ tsp Italian seasoning 

½ tsp garlic powder 

1 cup cherry tomatoes, halved 

1 large burrito size tortilla (or 3 soft taco sized)

1 cup shredded cheddar cheese

Spray oi In a 9 or 10 inch skillet, and cook spinach over medium heat until wilted, stir in minced garlic and take off the heat. Whisk cottage cheese with eggs in a large bowl and add all seasonings. Stir in cherry tomatoes and somewhat cool spinach.

Spray oil, in the skillet add your tortilla and the cottage cheese egg mixture. Sprinkle cheddar cheese on top and cook over low heat with a lid until the eggs are set. The bottom of the tortilla should be just lightly crisped. If the tortilla is getting overcooked or too dark, place in oven broiler until the eggs are fully set with a crusty cheddar lid.
