Double Chocolate Banana Bread

Fudgy, moist and dense chocolate chocolate chunk banana bread; so flavorful. The original recipe calls for 3 bananas, I had 5 and used them all. Always inspired by Deb Perelman https://smittenkitchen.com/2014/03/double-chocolate-banana-bread/ 


4-5 very ripe medium bananas

½ cup butter, melted

¾ cup brown sugar

1 egg

1 tsp vanilla

1 cup flour

½ cup cocoa powder

1 tsp baking soda

¼ tsp salt

1 tsp cinnamon, optional

1 cup dark chocolate chunks or chips

Preheat oven to 350*. Butter or spray oil a 9x5 bread pan and set to one side. In a stand mixing bowl, stir with the paddle attachment the bananas, melted butter, brown sugar, egg and vanilla until bananas are smashed and the mixture comes together. In a medium mixing bowl, whisk the flour, cocoa, baking soda, salt and cinnamon (if using). Stir into the banana mixture folding in with a rubber scraper until there are no more flour pockets. Stir in the chocolate chunks and spread into the prepared pan. Bake for 55-65 minutes or until bread reaches 205* on an insta-thermometer and the pick end or a toothpick comes out batter free.
