Enchilada Tater Tot Bake

Tater tots bake with enchilada sauce, black olives, and jack cheese. Serve up with sour cream, green onions, and a fried egg. This brunch bake would be great with cooked hamburger as well. 

2 lbs tater tots, (uses almost ½ the package)

3 cloves garlic, minced

½ cup enchilada sauce

1 cup sliced black olives

1 cup jack or pepper jack cheese, shredded

2 green onions, sliced

Sour cream

Fried eggs, optional

 

Preheat oven to 400*. Place tater tots in a layer in an 8“ baking dish. Sprinkle with garlic, enchilada sauce, and black olives. Sprinkle the top with jack cheese and bake for 20 minutes. Serve with a garnish of green onions, sour cream, and a fried egg.
