Goat Cheese Toast with Quick Strawberry Jam

Jammy strawberry and goat cheese toast on ciabatta or sourdough is a great start to any day with a quick whole-fruit jam. You could use plain goat cheese, blueberry or any other flavored chèvre you have on hand.
2 Tbsp blueberry goat cheese or any chèvre
2 slices sourdough or ciabatta bread
2 Tbsp butter
Quick Strawberry Jam:
1 pint strawberries, hulled
¼ cup sugar
½ tsp vanilla
Spread bread with butter and toast butter side down on a pre-heated griddle at 400* or in a skillet over medium-high heat for about 2 minutes. When golden remove to a plate and spread goat cheese over the warm toast.
Hull the strawberries, keeping the small ones whole and cutting any large ones about bite size. Cook berries and sugar over medium heat for about 5 minutes in a skillet until the sugar is melted and the syrup begins to thicken. Remove from heat and stir in the vanilla. Spoon berries over the goat cheese and enjoy warm.
