Gouda Green Onion Omelette Wrap

Green onion and hatch pepper gouda cheese with scrambled eggs wrapped in a tortilla. Brunch, lets taco-bout it!!!
1 Tbsp olive oil
4 eggs
Salt and pepper, to taste
2 green onions, sliced
½ cup hatch pepper gouda cheese ( or cheddar or pepper jack) shredded
4 tortillas
Salsa, for garnish
Sour cream, for garnish
Preheat olive oil in a large skillet. Whisk eggs, salt, and pepper in a mixing bowl. Swirl ¼ of the egg mixture in the preheated skillet. Top with some green onions and some of the cheese. Place tortilla on top and let cook for 30-60 seconds. Flip over and cook tortilla side down for 1 minute. Fold the tortilla in half and place onto a plate. Keep warm while repeating with the remaining ingredients. Garnish with salsa and sour cream.
