Grits with an Egg and Double Gloucester Cotswold Cheese

Grits are such an amazing vehicle for flavor. I love mine with butter and salt, a sprinkling of double gloucester cotswold cheese, a fried egg with a runny yolk and green onions. 

2 eggs

1 green onion, slices

¼ cup cotswold cheese, grated

2 servings grits, cooked according to package

Cook grits and keep warm, season with salt and butter. Fry eggs to your liking in a bit of butter and keep warm. Scoop grits in a serving bowl, top with an egg, cotswold cheese grates (or your favorite cheese) and some green onions.
