Peach Cobbler Muffins

2 cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp ground cinnamon

¾ cup granulated sugar

1 cup buttermilk 

1/4 cup olive oil

1 egg

1 tsp vanilla 

¼ tsp almond extract

2 peaches, diced

6 tsp raw or turbinado sugar

Preheat oven to 350*. Spray oil a muffin pan or fill with muffin liners. Whisk flour, baking powder, baking soda, salt, cinnamon and sugar together in a large mixing bowl. In another mixing bowl, whisk the buttermilk, olive oil, egg, vanilla and almond extract together. Dice peaches and throw into the flour mixture. Add liquid ingredients into the flour mixture and fold until just combined. Scoop the dough into the prepared pan, about ⅓ cup each or until wells are ¾ of the way full. Sprinkle the tops of the muffins with ½ tsp of raw sugar. Bake for about 15 minutes or until golden brown and a toothpick tester comes out batter free.
