Mediterranean Super Grain Breakfast Bowl

Ancient grains and veggies with an egg are a great way to start the day. This nutritious delicious bowl is drizzled with a creamy dressing. 

2 cups water 

1 cup ancient or super grains 

1 tsp Italian seasoning 

1 tsp onion seasoning 

2 eggs, cooked to your liking 

¼ cup sour cream

⅓ cup heavy cream

½ lemon, squeezed 

Onion seasoning, to taste

Avocado, cherry tomatoes, and green onion for topping 

Bring water to a boil in a saucepan and add the ancient grains. Stir in the Italian and onion seasoning and cover with a lid. Lower the heat to medium-high. Allow to simmer until the water is absorbed and the grains are tender, about 15 minutes. Cook eggs in a skillet your favorite way. Whisk the sour cream, heavy cream, lemon juice, and onion seasoning together. It should have a nice drizzling consistency. Layer grains in a bowl, top with the egg, and garnish with avocado, tomatoes, and green onions. Drizzle with the sauce.
