Sourdough Peach and Blackberry Breakfast Cobbler

Prep Time: 20 mins | Cook Time: 40 mins | Course: Dessert | Serves: 10

Wonderful buttery peach and blackberry cobbler is lightly sweetened and topped with a fluffy and cakey sourdough biscuit batter. This is a lovely brunch with friends! You could add a dollop of lightly sweetened whipped cream (or a scoop of ice cream on top for dessert). Inspired by the lovely Julie of Lovely Little Kitchen https://lovelylittlekitchen.com/sourdough-peach-cobbler/

1 cup flour

½ cup sugar

2 tsp baking powder

¼ tsp salt

¾ cup milk

½ cup sourdough starter

1 tsp vanilla

½ cup butter, melted

2 peaches, sliced

1 cup berries, blackberries, or loganberries

⅓ cup brown sugar

In a large mixing bowl, whisk flour, sugar, baking powder, and salt together. Pour milk, sourdough starter, and vanilla on top and stir until the dough comes together. Preheat oven to 350*. Melt butter and pour into a castiron 12” skillet or comparably sized baking dish. Arrange peach slices and blackberries in the skillet. Spread the sourdough batter over the fruit and sprinkle with brown sugar. Bake for 40 minutes, until the top is beautifully browned.
