Passion Fruit Sourdough Crepes

2 cups sourdough starter
6 eggs
¼ cup sugar *
4 Tbsp butter, melted
1 tsp vanilla *
Filling:
8 oz cream cheese, softened
2 Tbsp sugar
1 cup heavy cream
1 tsp vanilla
2 Tbsp passion fruit liqueur, optional
¼ cup passion fruit curd
In a blender, add sourdough starter, eggs, sugar, butter, and vanilla. Blend until smooth. Preheat a 10” skillet over medium heat, and add olive or coconut oil spray. Pour a small amount of batter into the preheated skillet and swirl to coat the pan. Cook on one side for about 1-1 ½ minutes. The edges will become golden, run a spatula around the edges and slip under the crepe. Flip over and cook for 20-30 seconds or until it is no longer sticky and releases easily from the skillet. Stack them on a plate as they cook.
In a stand mixer with a wire whisk attachment, beat cream cheese and sugar together until light and fluffy, drizzle in the heavy cream, and whip until it forms medium peaks. Add vanilla, passion fruit liqueur (if using), and passion fruit curd.
Spread a generous layer over the crepe and fold in half, then again, to form a triangle or roll up to form a round. Drizzle the top with more passion fruit curd.
