Sourdough Crepes

Sourdough crepes are a delicious way to start the day. These are sweet crepes, but if you prefer savory crepes; just omit the sugar and vanilla. Inspired by Hope of Hopewell Heights. https://hopewellheightsblog.com/sourdough-crepes/
2 cups sourdough starter
6 eggs
¼ cup sugar *
4 Tbsp butter, melted
1 tsp vanilla *
In a blender, add sourdough starter, eggs, sugar, butter, and vanilla. Blend until smooth. Preheat a 10” skillet over medium heat, and add a spray of olive or coconut oil. Pour a small amount of batter into the preheated skillet and swirl to coat the pan. Cook on one side for about 1-1 ½ minutes. The edges will become golden, run a spatula around the edges and slip under the crepe. Flip over and cook for 20-30 seconds or until it is no longer sticky and releases easily from the skillet. Stack them on a plate as they cook, and add more cooking spray as needed. Fill as desired.
*Omit if making savory filled crepes.
