Peanut Butter Banana Bread
Prep Time: 15 mins | Cook Time: 60 mins | Course: Breakfast | Yield: 1 loaf
Chocolate chip and peanut butter banana bread; so moist and decadent!!! I’ve added a completely optional chocolate peanut butter swirl on top. Inspired by Carrian and Cade of Oh Sweet Basil https://ohsweetbasil.com/peanut-butter-banana-bread/
½ cup butter, softened
½ cup peanut butter (I like chunky)
½ cup sugar
2 eggs
3-4 bananas
1 ¾ cups flour
¾ tsp baking soda
1 ¼ tsp cream of tartar
½ tsp salt
12 oz dark chocolate chips
Swirl:
2 oz dark chocolate
¼ cup peanut butter
Preheat oven to 350*. Spray oil a bread pan and set to one side. In a stand mixer, stir the butter, peanut butter and sugar together until its fluffy. Add in the eggs and bananas and mix in. Whisk flour, baking soda, cream of tartar and salt together and add in, mixing until just incorporated. Stir in the chocolate chips. Spread evenly into the prepared bread pan. If doing the swirl, melt the chocolate in the microwave for 30 seconds at a time until melty. Stir in the peanut butter and top the bread with spoonfuls. Swirl in with a butter knife. Bake for 55-65 minutes or until a toothpick tester comes out clean. I like to use an insta-thermometer with a minimum temperature of 200*
