Peanut Butter Chocolate Muffins

Peanut butter and dark cocoa muffins with dark chocolate chips. Top these delectable treats with a few extra chocolate chips and some chopped peanuts for a decadent breakfast treat. Inspired by Dot Vartan in her Mad About Muffins cookbook.

¾ cup peanut butter

⅔ cup milk

1 egg

1 tsp vanilla

1 ¾ cup flour

1 Tbsp baking powder

¼ tsp salt

¼ cup cocoa powder

½ cup sugar

6 Tbsp butter, melted

⅔ cup dark chocolate chips, a few extra for the tops

2 Tbsp chopped peanuts, optional for tops

Preheat oven to 375. Stir peanut butter, milk, egg and vanilla together. Sift the flour, baking powder, salt, cocoa and sugar on top of the peanut butter mixture. Stir in with the melted butter and chocolate chips, mixing until just incorporated. Scoop ⅓ cup of batter into muffin liners inserted in a muffin tin. Bake 20 minutes
