Potato Crusted Shiitake Cheddar Quiche

Hash browns, shiitake mushrooms and cheddar cheese make this quiche a delectable treat. You can tell this was delicious by the photo or rather the fact that we were so eager to eat it, we nearly forgot to photograph it. 2 12 oz pkgs frozen hash browns, thawed

¼ cup butter, melted

6 eggs

1 cup shiitake mushrooms, sliced

½ cup sour cream

1 cup cream

2 green onions, sliced

Garlic salt, to taste

Pepper, to taste

2 cups grated cheddar cheese, divided


Preheat oven to 425*. Press the hash browns in a 12” skillet pressing up the sides a bit and pour the butter over all. Bake for 25 minutes. Meanwhile whisk the eggs, mushrooms, sour cream, cream, green onions, garlic salt, pepper and 1 cup cheddar cheese together. Pour over the par-baked potato crust and top with the remaining cup of cheese. Bake 30 minutes longer.
