2 ½ cups flour
2/2 cup sugar
1 tsp baking powder
1 tsp salt
1 tsp pumpkin spice seasoning, optional
½ cup cold butter, cubed
⅔ cup walnuts
2 bananas
½ cup sourdough starter
1 egg
1 tsp vanilla
Banana Glaze:
1 cup powdered sugar
1” piece of banana
½ lemon, juiced
½ tsp vanilla bean paste
Preheat oven to 400°. In a stand mixer, measure flour, baking powder, salt, pumpkin spice, cubed butter, and walnuts. Mix on medium speed for two minutes until the flour is well coated with butter and the walnuts are broken down to bite-sized pieces. Add bananas, sourdough starter, egg, and vanilla. Mix until the dough has just come together.
On a lightly floured surface pat or roll the dough into a circle about 2“ thickness. Cut into eight wedges with a pizza roller or using a circle or heart biscuit cutter, cut into shapes. Place on a parchment-lined baking sheet and bake for 18 to 20 minutes.
Whisk banana glaze ingredients together until smooth and drizzle over warm scones.
