Yogurt Parfaits with Raspberry Chia Jam

Raspberry chia jam over Greek yogurt, a drizzle of honey, and fresh raspberries or granola if you like. Homemade raspberry chia jam is made with energizing honey and chia seeds. Ready to serve over yogurt, pancakes, toasted English muffins, or smoothies. Fight the January blahs with a healthy energizing protein-filled breakfast.
12 oz frozen or fresh raspberries
2 Tbsp chia seeds
Honey, to taste
Mandarin or lemon zest and juice, optional
1/2 cup Greek yogurt
1/4 cup raspberry chia jam
Honey, to taste
Granola and fresh raspberries, optional garnish
Microwave raspberries, and Chia seeds together in a large Pyrexx measurer or other microwave-safe bowl for two minutes. Stir in a drizzle of honey and some citrus zest and juice, if desired.
Divide yogurt into bowls or stemware for serving, spoon raspberry Chia jam on top, and drizzle with a bit of honey and a sprinkling of granola or fresh berries, if using.
